One of the great ways we save money is by cooking from scratch. Not only does it make a notable difference in our grocery bill but also the food we eat is healthier and so hopefully contributes to our general good health (which we know is always cheaper!).
One of our "From Scratch" foods that we have enjoyed a couple of times this week is cornbread. My kids truly love cornbread and I am not sure why I don't make it more often. It is very cheap and our freshly ground corn has vitamins in it too. I thought I would share the recipe that I got from my Mom and I have enjoyed all of my life.
Mom's Cornbread
1 c. flour ( I use whole wheat)
1 c. cornmeal
1/4 cup sugar
1 t. salt
3 t. baking powder
3/4 cup milk
1 egg
1/4 cup oil
Mix dry ingredients together first. Then mix in the wet ingredients but don't stir too much, some lumps are okay. Bake in a 400 degree oven for around 20 minutes.
We really enjoy cornbread with soups (especially ham and bean!) and we also enjoy it plain with butter or also with honey or maple syrup.
